Chupacabra
Being a Texas History teacher and having read books on Texas folklore, there are a couple of items to mention, one is the famous La Llorona or (crying woman) that haunts for eternity any bodies of water mainly in the SW United States looking for her children that drowned, early settlers east of San Antonio heard it many times not even having heard of the legend and named a small stream with the appropriate name Woman Hollering Creek.
The other is of the creature in the piney woods of East Texas that has been seen several times and possibly many more times that were not reported by citizens for fear of being labeled looney...Indians had a name for that roughly translates to Tall Man Bear....The movie Legend of Boggy Creek is loosely based on the events that have taken place in East Texas.
